Nkwobi

This extremely easy and delicious recipe has found its way in the hearts of many people who prefer not to endeavor heard to do a ponderous task. Ingredients Required:

  • Bokoto

  • ½ tbsp. garlic powder

  • Utazi leaves

  • ½ tbsp. Ginger powder

  • 2 knor cubes

  • 125 ml palm oil

  • ½ tbsp. salt

  • ½ tbsp. thyme

  • 4 scotch bonnets

  • 1 onion

  • ½ tbsp. pounded nutmeg

  • 2 tbsp. potash solution

  • 1 tbsp. crayfish

  • Other seasoning for taste

  • Chicken condiments ½ tbsp.

Method

  • Toss off the Cow’s Foot (BOKOTO) into a large pot and fill in some water to cover the level.

  • Crunch knor cubes, sprinkle thyme, garlic powder, salt, ginger powder and add blended onion and scotch bonnets paste into the pot and muddle to cook for one hour.

  • Keep aside pounded Kalabash Nutmeg, soaked Utazi leaves and prepare an aqueous-solution of potash for further use.

  • In a frying pan, spew palm oil and pour 2tbsp of potash solution accompanied by the addition of half scotch bonnets paste, soaked utazi leaves, grinded nutmeg, pulverized crayfish, seasoning powder and stir well to form a semisolid paste.

  • Check the cooked and tender Bokoto and transfer the contents of palm oil paste to the pot further cooking it for another 5 minutes.

  • Garnish the Nkwobi with sliced onions and coriander and enjoy.
